I know that I told you Greek Chicken was my favorite though all the recipes are loved by myself and my family. But, I tried this new recipe two times now and have to say that it might be a tie for first place with Greek Chicken. Everyone from the oldest to the youngest here at my house loves it.

Angelic Chicken Recipe for the Busy Piano Teacher
Ingredients:
- 10-12 chicken breast tenderloins (I buy these and put them in the crockpot frozen) OR 4-6 chicken breasts
- 1/4 c. butter
- 1 pkg dry Italian Dressing Mix (in the salad dressing aisle)
- 1 can reduced fat cream of mushroom soup
- 1/2 C white cooking wine
- 4 oz cream cheese with chives and onions (this comes in an 8 oz container, so save the rest for next week when you make it again!)
- Hot rice or hot cooked angel hair pasta (I think all piano teachers really need to invest in a good rice cooker with a timer delay. This one is easy to clean.)
Directions:
Place chicken in crockpot (uncooked and/or frozen). In a saucepan, melt butter. Stir in Italian mix. Then stir in soup, wine, and cream cheese until smooth. Pour over chicken. Cover and cook on low for 4-5 hours. Serve over hot pasta or hot rice.
Recipe Notes:
- This recipe can easily be doubled!
- This single recipe produces a lot of sauce, so you could even add another chicken breast or two without doubling the other ingredients

I’m so glad you mentioned the rice cooker! 🙂 I spent the first 18 years of my life in Singapore (as a missionary kid)–thus ate rice almost on a daily basis. I was so shocked when I came back to America for college and learned that most Americans cooked rice on their stove top! I tell all my friends I had never even seen rice cooked that way until I came to America—the hard way, in my opinion! 😉 I couldn’t live without my rice cooker. 🙂
And, thanks so much for the recipes. I plan all my meals at the beginning of the week so I know exactly what to prepare each day, because, yes, as a teacher, you have to plan those things as lessons usually don’t end until dinner time! I am constantly so awed by the thoughtfulness you show on your page—you think of so many ways to encourage us other teachers and it means alot. Wish I lived closer to you! 🙂

Yes, I had no idea that I cooked rice the hard way until I found out many of my Asian friends didn’t even know it was possible to cook it on the stove. It is soooo much better in the rice cooker! I’m so glad I finally got one.
