Easy Meals for the Busy Piano Teacher: #2 Creamy Potato Soup

If you read the last “Easy Meals for the Busy Piano Teacher” post, you’ll know that I’m sharing my easiest, yummiest recipes with you, my piano teaching friends because:

  1. I have no time to cook
  2. I hate to cook most of the time
  3. I have to feed more than 2 mouths (5 to be exact)
  4. I don’t like to use exotic, expensive or more than 7 ingredients
    And Mostly…
  5. Piano teaching is usually a 2nd shift job

I know you are like me in some of these issues, if not all. So, I hope you’ll enjoy this 2nd recipe in this series. The hardest part about this recipe is that you have to take about 3-4 minutes to chop up some onions. Really. That’s the hardest part.

Creamy Potato Soup

Ingredients:

  • 1 – 28 oz bag of frozen, shredded potatoes. You can use chopped potatoes or just cut up your own fresh ones, though that adds to the time factor.
  • 32 oz of chicken broth (that’s about 2 1/2 cans)
  • 1 can fat free or healthy cream of chicken soup
  • 1/2 C chopped red onion
  • 1/4 t. ground pepper
  • 1 – 8 oz. package cream cheese (can use 1/3 fat cream cheese)
  • Other toppings: shredded cheese, green onions, tabasco sauce, etc.

Directions:

Put the chicken broth, chicken soup, onion, ground pepper in the crock pot and mix it well. Add the potatoes. Cook on low for 6-8 hours or on high for 3-4 hours. Note: If you use fresh potatoes, these times are great, but if you opt for the frozen potatoes, I find that your cooking time is on the lower end. You might have to experiment with the time because of differing crock pot times.

1 hour before eating, between your student’s lessons: Add the cream cheese. Mix this around after 1 hour and you are ready to eat.

Serving:

Top with shredded cheese, mix in tabasco sauce, or whatever else tickles your taste buds.

  3. If I prep broccoli when I get home from the grocery store, I can add it in (finely chopped), and a can of carrots, so we get more veggies. It’s a great way to hide veggies! (for me, not the kids, lol)
